Engraved "coin" silver knife

Hi all, pleased to share this one for your collective thoughts and wisdom. From Coin I am assuming US made. The stamp appears to be J.C. Dolon or similar but cannot find them as a maker if so. There also appears to be a horses head over two down ward chevrons. Any ideas welcome!

@Bartholomew sensational research! So Dolon is the jewller. I’ve assumed Coin to simply mean it is 900 fineness. So the maker is probably the other mark
