The only mark I can find is the word “sterling” which you can clearly see in the attached picture. I have gone through a silver marking book but cannot find anything similar. The item I am questioning is a pair of large poultry shears.

I think you are going to have trouble with this unless you can identify the pattern - and then only if the pattern is specific to one manufacturer. If you have loads of time to spare you could try looking at patterns at replacements.com.
